Strawberry Apple Cake
Serves: 10
Preparation: 30 minutes
Cooking: 40-50 minutes
Ingredients
2 cups strawberries, stems removed and halved
2 large apples, peeled and sliced
½ cup blueberries
200g butter, softened
260g sugar
3 eggs
1 small pot of berry yoghurt
250g flour
1 teaspoon baking powder
Method
Preheat oven to 175ºC. Line a greased spring-base cake tin with baking paper
Cream butter and sugar, add eggs one at a time beating well. Stir in yoghurt, flour and baking powder. Pour half of the mixture into the base of the tin and smooth out evenly
Arrange 1 sliced apple over the mixture and half of the blueberries and strawberries. Top with remaining cake mixture and repeat with apples, blueberries and strawberries
Bake for 40-50 minutes until cooked through (a skewer should come out without cake batter stuck to it)
Serve warm with fresh berries and yoghurt for dessert or it is just as delicious at room temperature
