Strawberry Crumble Muffins

Strawberry Crumble Muffins

Serves: 12

Preparation: 10 minutes

Cooking: 20-25 minutes

 

Ingredients 

2 cups strawberries, diced
2 cups plain flour
1 cup Greek yoghurt
½ cup brown sugar
50g butter, melted
2 eggs
2 teaspoons baking powder
Pinch salt
2 teaspoons vanilla extract


Topping ingredients

5 tablespoons butter, melted
1 teaspoon cinnamon
½ cup all-purpose flour
1/3 cup brown sugar

 
Method  

Preheat oven to 180ºC

In a bowl, combine baking powder, salt and flour

In a separate bowl, whisk together eggs, butter, sugar and vanilla. Add Greek yoghurt and then add in the dry ingredients. Stir gently until combined and fold in strawberries

In a small bowl, mix together the topping ingredients

Spoon batter into a greased muffin pan and sprinkle with crumble topping

Bake for 20-25 minutes or until a skewer comes out clean
