Stuffed Kūmara

Serves: 2 to 4

Preparation: 15 minutes

Cooking: 40 minutes



2 large kūmara, washed and halved lengthways
1 tomato, diced
1 avocado, pit removed, diced
½ red onion, diced
1x 400g can of chickpeas, drained & rinsed
1/2 cup Greek yoghurt or coconut yogurt
Small bunch coriander, stems removed
3 tablespoons olive oil
½ teaspoon paprika
½ teaspoon cumin
Freshly ground black pepper



Pre heat the oven to 200°C fan bake

Puncture holes in kūmara halves with a fork, place onto a baking dish (cut side up). Bake in the oven for 20-25 minutes, until tender

While the kūmara are cooking, toss chickpeas with olive oil, paprika and cumin

Add the tomato, red onion, avocado and coriander to the chickpeas

Using a fork, scoop a small amount of flesh out of the kūmara and combine with chickpeas, tomato, avocado and coriander

Spoon this mixture into the kūmara, top with yoghurt and black pepper. These are best served warm
