Tandoori Vegetable Soup

Tandoori Vegetable Soup

Serves: 4-6

Preparation: 10 minutes

Cooking: 20 minutes



1 tablespoon canola oil
2 tablespoons Tandoori paste
2 carrots, washed and diced
1 onion, peeled and diced
2 sticks celery, diced
2 cups of vegetable stock or water
2 tablespoons natural yogurt
4 coriander sprigs



Heat the oil in a heavy based saucepan. Stir-fry Tandoori paste and onions for one minute

Add vegetables and stir-fry for two minutes until slightly browned

Add stock, bring the mixture to the boil, reduce heat and simmer until vegetables are cooked

Serve with a dollop of natural yogurt and a coriander sprig
