Vanilla Poached Kiwifruit

Vanilla Poached Kiwifruit

Serves: 2-3

Preparation: 10 minutes

Cooking: 10 minutes



4 kiwifruit, peeled and cut in half
6 tablespoons brown sugar
1 vanilla pod or 1 teaspoon vanilla extract
2 cinnamon sticks
2 peppercorns
2 star anise pods
1 cup water
1 cup plain yoghurt or cream to serve



Place the sugar, cinnamon sticks, peppercorns and star anise pods into a medium saucepan. Pour in the water and add the vanilla. If using a vanilla pod, slice lengthways and scrape out seeds. Add both seeds and pods to the water

Bring to a boil until the sugar dissolves

Turn down the heat. Add the kiwifruit and simmer gently for 5 minutes

Serve in bowls with a little of the poaching syrup and plain yoghurt
