Waldorf Salad

3 red apples, unpeeled and sliced (we used Royal Gala)
3 stalks celery, sliced
1 handful purple seedless grapes
½ cup walnuts halves, toasted
4 Tablespoons mayonnaise
1 teaspoon grainy mustard
½ cup of low fat natural Greek yoghurt
4 handfuls of baby cos lettuce



Mix mayonnaise, mustard and yoghurt in a large bowl then add apples, celery, grapes, and walnuts. Mix gently with a spoon to coat the ingredients

When ready to serve, place lettuce leaves onto a salad platter or bowl. Top with apple mixture and serve chilled


NB: This salad can be made up to a day before serving if stored in an airtight container in the fridge
