Cherry Ice Cream with Ginger Biscuits

Cherry Ice Cream with Ginger Biscuits

Preparation: 15 minutes

Cooking: none, freezing time at least 1 hour

 

Ingredients

2 handfuls fresh cherries, pitted
8 ginger biscuits, crumbled
1 handful pistachio nuts, toasted
1 litre vanilla ice cream

 

Method

Allow ice cream to soften at room temperature while preparing other ingredients

Line a loaf tin with cling wrap

Gently fold cherries, biscuits and pistachio nuts through the ice cream

Spoon into the lined tin, flatten the top, cover with cling wrap and freeze

To serve, turn out onto a serving platter and remove the cling wrap
