Melon, Cucumber and Mint Salad
Serves: 6 to 8 as a side

Ingredients
1 rock melon, balled (if you have a melon baller or you can chop)
1 or 2 cucumbers, peeled, deseeded and chopped
1 Tablespoon white balsamic vinegar
1 Tablespoon extra virgin olive oil
Juice of half a lemon or lime
Fresh mint leaves
Method
In a bowl add the melon, cucumber, vinegar, lemon juice and olive oil and use your hands to cover well
Refrigerate until ready to serve.
Serve on a platter with fresh mint leaves as an edible garnish
NB: This salad also goes well with crumbled ricotta
