Broccoli & Cranberry Salad

1 medium broccoli, chop florets into small pieces and thinly slice the stalks
1/3 cup dried cranberries
½ red onion, finely sliced
¼ cup sliced almonds
½ cup cheddar cheese (optional)


1/3 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
Salt & pepper



In a large bowl gently mix the salad ingredients

Combine the dressing ingredients and pour over salad. This salad is best served cold

Store any leftovers in the fridge
