Zesty Lime Curd

Zesty Lime Curd

Serves: Makes 2 cups

Preparation: 10 minutes

Cooking: 10-15 minutes



½ cup lime juice
Zest of 1 lime
75g butter
1/3 cup caster sugar
3 eggs



Melt butter in a medium-sized, heavy-bottomed pot over a low heat. Remove from heat and allow to cool 

Lightly beat the eggs and whisk into the butter. Add lime juice, zest and caster sugar

Place over a low heat and whisk continuously until mixture thickens

Remove from heat and cool slightly before pouring lime curd into a sterilised jar. Once fully cool, place a lid on the jar and store in the fridge for up to two weeks
